SUSTAINABLE CATERING FOOD WASTE DISPOSAL

treated waste to power them. Of the resulting five tonnes of treated waste, approximately two tonnes is being earmarked for fuel, whilst the remaining three tonnes will be sold off as biofuel. The missing three quarters (15 tonnes) disappears as water vapour.

‘COSTS THAT WILL VANISH’ Aside from the existing food waste disposal costs, the bakery’s gas bills are also more than £1,000 per month at each site – costs that will vanish with the move to self-waste fuelled biomass heating. In addition to schools and food processors, Accelerated Aerobic Biodigesters from BioNova are successfully in use for catering firms serving large staff and public canteens and eateries, including successful installations for IKEA and Honda. Recognition for BioNova has also arrived in the form of winning a prestigious Food Processing Award (in the Energy Management category) at the end of April. This followed their nomination at the Organics Recycling Association’s

Awards (for

Innovation in Bio- waste technology). A pasteurising, aerobic process, microbes in the BioNova unit replenish to create the right conditions for the breaking down of waste to a potentially income- generating powder. “At the bakery”,

continued Tayton, “our customer paid £2,000 for a trial, which we offered to

refund against the final installation. However, the savings made during the trial period alone were in excess of £3,000, so not surprisingly they immediately saw the economic, as well as the environmental and health & safety benefits”.

He added: “Whether it is for own-use

or income generation, the opportunity for caterers to turn a significant overhead into a low-cost, waste-to-energy scheme is now there for the taking”. For more information, please contact
